Prepare the Batter

  1. Wash the rice and fenugreek seeds thoroughly 2–3 times.
  2. Soak them together in sufficient water for 5–6 hours.
  3. About 10 minutes before grinding, wash the poha and soak it in water.
  4. Drain the soaked rice, fenugreek seeds, and poha.
  5. Add them to a mixer jar with a little water.
  6. Grind into a smooth and soft batter.
  7. Transfer the batter to a large bowl, cover, and allow it to ferment for 5–6 hours.

Prepare the Dosa

  1. Add salt to the fermented batter.
  2. Add a little water and mix well to achieve a dosa-batter consistency.
  3. Heat a dosa tawa over medium heat and lightly grease it with oil.
  4. Pour a ladleful of batter onto the center of the hot tawa.
  5. Gently spread it into a round dosa. Keep it slightly thicker for a softer texture.

  7. Cover and cook over medium heat until the dosa is cooked through and lightly golden.
  8. Flip and cook the other side briefly, if desired.
